LENTIL SOUP
INGREDIENTS:
- 1/4 cup olive oil
- 1 medium yellow onion chopped
- 2 carrots chopped
- 4 garlic cloves minced
- 2 tsp cumin
- 1 tsp curry
- 1/2 tsp thyme
- 28oz can diced tomatoes
- 1 cup lentil rinsed
- 4 cups vegetable broth
- 2 cups water
- 1 tsp salt
- pinch of red pepper flakes
- 1 cup chopped kale
- 1 T lemon juice
